"Pétillant naturel"—is a French term which loosel means "naturally sparkling". Although Champagne is probably the best known sparkling wine, pétillant naturel is probably the oldest style of commercially produced sparkling wine. Pétillant Naturel is made by the 'methode ancestral' wherein the wine is fermented in the bottle and the carbon dioxide is not allowed to escape during fermantation which creates the bubbles. Champagne, on the other hand, is produced through a more labor and time intensive process in which the wine fermented two times. This delightful sparkler has flavors and aromas of tangerine, green apple and lemon with minerality on the finish.
